This coffee is purchased from small coffee farmers near the community of The Little Mountain School. These farmers are paid a higher price per quintal than they might receive from coffee conglomerates, with the aim of providing them with a better income to improve the quality of their lives.

Characteristics of our Strong Coffee Farm

The coffee plantation is located near Marillanos at an elevation of approximately 1,400 meters (4,593 feet).

The climate of Marillanos is generally pleasant and tropical, making it a conducive environment for agriculture and outdoor activities. The warm, temperate climate provides an ideal setting for coffee cultivation. The combination of ample rainfall and sunny days creates optimal conditions for the growth of coffee plants, resulting in high-quality beans with rich flavors.

Processing for our Strong Coffee

The coffee beans are harvested at different stages of ripeness, from green to a precise dark red. The cherries are placed on drying beds in thin layers to allow for even sun exposure. The coffee cherries are dried in the sun whole, allowing the natural sugars from the fruit to transfer to the coffee bean. During this process, the cherries are regularly turned to prevent fermentation or the growth of mold. Drying takes around 4 to 5 weeks. Once the cherries are dried, the skin is removed, revealing the green coffee beans inside. Finally, the beans are stored under optimal temperature and humidity conditions until they are ready to be roasted.
